Italian Elk Rolls
Pepperoni slices
3 tablespoons cream cheese
2 tablespoons prepared Olive Tapenade
1.5 tablespoons grated parmesan cheese
¼ cup shredded mozzarella cheese
¼ tsp. red pepper flakes
½ tsp. dried oregano
½ tsp. dried basil
½ tsp minced garlic
Black pepper
1. Mix together softened cream cheese, tapenade, parmesan cheese, mozzarella cheese, red pepper flakes, oregano, basil, and minced garlic. Set aside.
2. Cut steaks to ½ in. thickness. Pound meat to ¼ in thickness.
3. Spread cream cheese mixture onto pounded meat. Next, layer meat with pepperoni slices. Roll up meat and secure with a toothpick.
4. Sprinkle meat rolls with black pepper. Fry meat rolls on medium high in a little oil until browned on the outside. Brown on all sides.
5. Place rolls in a medium casserole dish. Pour pan juices over the meat rolls. Add 1 cup chicken broth to the dish and bake in a preheated 350 degree oven for 15 - 30 minutes.
